Green Tea Matcha Energy Balls

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup nut butter (such as almond butter or peanut butter)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons green tea matcha powder
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chopped nuts (such as almonds, cashews, or pistachios)
  • 1/4 cup dried fruit (such as chopped dates, raisins, or cranberries)
  • Optional: 1-2 tablespoons water, if needed for binding

Directions:

  • In a mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, and green tea matcha powder. Stir until well combined.
  • Add the shredded coconut, chopped nuts, and dried fruit to the mixture. Mix everything together until evenly distributed.
  • If the mixture seems too dry and crumbly, add 1 to 2 tablespoons of water gradually, as needed, until the mixture holds together when pressed.
  • Once the mixture is well combined and holds together, use your hands or a cookie scoop to portion out small amounts of the mixture.
  • Roll the portions into balls between your palms, applying gentle pressure to shape them.
  • Place the energy balls on a baking sheet or plate lined with parchment paper.
  • Chill the energy balls in the refrigerator for at least 30 minutes to firm up.
  • Once chilled, the Green Tea Matcha Energy Balls are ready to enjoy! They can be stored in an airtight container in the refrigerator for up to a week.
