Veggie Stir-Fry

  • 2 tablespoons sesame oil
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, snap peas, etc.), sliced
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

  • Heat sesame oil in a wok or large skillet over medium-high heat.
  • Add the mixed vegetables to the hot oil and stir-fry for about 3-4 minutes, or until they are tender-crisp. Stir frequently to ensure even cooking.
  • In a small bowl, mix together soy sauce, minced garlic, and grated ginger.
  • Pour the soy sauce mixture over the stir-fried vegetables in the skillet. Toss everything together to coat the vegetables evenly.
  • Continue stir-frying for another minute or so, until the vegetables are well coated and the flavors are combined.
  • Remove the skillet from the heat and transfer the stir-fried vegetables to a serving dish.
  • Serve the Veggie Stir-Fry over steamed rice or noodles as a flavorful and healthy meal.
