Sweet Potato Black Bean Enchiladas (Gluten-Free and Vegan)

Ingredients:

For the enchilada filling:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the enchilada sauce:

  • 2 cups tomato sauce or crushed tomatoes
  • 1/4 cup water
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For assembling the enchiladas:

  • 8-10 gluten-free tortillas
  • Vegan cheese, shredded (optional)
  • Chopped fresh cilantro (for garnish)

Directions:

  • Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes, red bell pepper, onion, and minced garlic. Sauté for about 8-10 minutes, or until the sweet potatoes are tender.
  • Add the black beans, cumin, smoked paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes. Remove from heat.
  • In a separate bowl, whisk together all the ingredients for the enchilada sauce until well combined.
  • Spread a thin layer of enchilada sauce on the bottom of the greased baking dish.
  • Take a gluten-free tortilla and spoon a portion of the sweet potato and black bean filling onto the center. Roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  • Pour the remaining enchilada sauce evenly over the assembled enchiladas. If desired, sprinkle shredded vegan cheese on top.
  • Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the enchiladas are heated through and the sauce is bubbly.
  • Remove the foil and continue baking for an additional 5 minutes to lightly brown the cheese (if using).
