Directions:
- Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes, red bell pepper, onion, and minced garlic. Sauté for about 8-10 minutes, or until the sweet potatoes are tender.
- Add the black beans, cumin, smoked paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes. Remove from heat.
- In a separate bowl, whisk together all the ingredients for the enchilada sauce until well combined.
- Spread a thin layer of enchilada sauce on the bottom of the greased baking dish.
- Take a gluten-free tortilla and spoon a portion of the sweet potato and black bean filling onto the center. Roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce evenly over the assembled enchiladas. If desired, sprinkle shredded vegan cheese on top.
- Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the enchiladas are heated through and the sauce is bubbly.
- Remove the foil and continue baking for an additional 5 minutes to lightly brown the cheese (if using).
