Ingredients:
- 2 boneless, skinless chicken breasts
- 4 slices of fresh mozzarella cheese
- 4 slices of ripe tomatoes
- Fresh basil leaves
- Salt and pepper to taste
- Olive oil
Directions:
- Preheat the oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Season the chicken breasts with salt and pepper.
- Stuff each pocket with a slice of mozzarella cheese, a slice of tomato, and a few basil leaves.
- Secure the pockets with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken breasts on both sides until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
- Remove from the oven, let the chicken rest for a few minutes, then slice and serve.
