Caprese Stuffed Chicken Breast


  • 2 boneless, skinless chicken breasts
  • 4 slices of fresh mozzarella cheese
  • 4 slices of ripe tomatoes
  • Fresh basil leaves
  • Salt and pepper to taste
  • Olive oil


  • Preheat the oven to 375°F (190°C).
  • Slice a pocket into each chicken breast, being careful not to cut all the way through.
  • Season the chicken breasts with salt and pepper.
  • Stuff each pocket with a slice of mozzarella cheese, a slice of tomato, and a few basil leaves.
  • Secure the pockets with toothpicks if needed.
  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear the chicken breasts on both sides until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
  • Remove from the oven, let the chicken rest for a few minutes, then slice and serve.
