Veggie Quesadillas

Ingredients:

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup sautéed vegetables (e.g., bell peppers, onions, zucchini, or any other desired vegetables)
  • Optional toppings: salsa, guacamole, sour cream, or chopped cilantro

Directions:

  • Heat a large skillet or griddle over medium heat.
  • Place one tortilla in the skillet and let it warm up for a few seconds.
  • Sprinkle approximately 1/2 cup of shredded cheese evenly over one half of the tortilla.
  • Add about 1/4 cup of sautéed vegetables on top of the cheese, distributing them evenly.
  • If desired, add any additional toppings such as salsa, guacamole, sour cream, or chopped cilantro.
  • Fold the tortilla in half, pressing it gently with a spatula to seal.
  • Cook the quesadilla for about 2-3 minutes on each side, or until the tortilla turns golden brown and the cheese melts. You can press down lightly on the quesadilla with a spatula to help it cook evenly.
  • Remove the cooked quesadilla from the skillet and let it cool for a moment before slicing it into wedges.
  • Repeat the process with the remaining tortillas, cheese, and sautéed vegetables to make additional quesadillas.
  • Serve the veggie quesadillas hot, with optional toppings like salsa, guacamole, sour cream, or chopped cilantro on the side.
