Ingredients:
- 1 pound (450g) chicken breasts
- 2 eggs, beaten
- 1 cup breadcrumbs or panko
- Salt and pepper to taste
- Cooking spray or olive oil for greasing
Directions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
- Cut the chicken breasts into strips or "tenders" of desired size.
- In a shallow dish or bowl, season the chicken strips with salt and pepper.
- Dip each chicken strip into the beaten eggs, allowing any excess to drip off.
- Coat the chicken strip with breadcrumbs or panko, pressing gently to adhere the coating to the chicken. Repeat the process with the remaining chicken strips.
- Place the coated chicken strips on the prepared baking sheet, leaving a bit of space between each strip.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (74°C).
- Remove the baked chicken tenders from the oven and let them cool for a few minutes before serving.
- Serve the Baked Chicken Tenders with your favorite dipping sauce, such as barbecue sauce, honey mustard, or ranch dressing.
